Sunday: Humus Platter: Humus, onion, tomato, cucumber, pita toasted with mixed herbs
Monday: Sloppy Joes & Green Beans (Tofu disguised as ground beef)
Tuesday: Tacos (Tofu disguised as ground beef again! + Lettuce, tomato, onion, avocado)
Wednesday: Pesto Rice with Garlic Bread
Thursday: Spaghetti & Arugula Frittata
Friday: Potato, Peppe, & Mushroom Hash
Saturday: Pasta Primavera

I'm just impressed that you plan your menu out for the week. Mike and I keep talking about doing that, but still every day it's the same question. What do you have planned for dinner?
All sounds good but, um, spaghetti frittata? Is this like a carbonara dish or more like scrambled eggs with pasta in it? I can't quite get a mental image of this one.
We pick 7 meals for the week but don't decide what to have until each night. This way, our choices are narrow and we avoid running out to the store at the last minute. I hate nights where nothing we planned sounds good though. :-) That's usually "let's just go to the pub" night.
The spaghetti frittata is new for us. Cooked noodles & tomato sauce, parsley, cayenne, salt & pepper. Then pour over milk & egg mixture in pan and let it cook. Top with parmesan. It's supposed to be pizza-ish. I'm skeptical...
