fried garbanzo beans with chorizo + spinach

makes 4 servings

  4 tblsp olive oil

  2 cups cooked or canned garbanzo beans, as dry as possible

  4 oz chorizo, diced (we use soy chorizo from trader joe’s)

  8 oz fresh spinach, chopped

  1/4 cup sherry

  1-2 cups bread crumbs

+ we added frozen corn

 

preheat boiler

cook beans in olive oil and salt and pepper til brown

add chorizo, cook til beans are crisp

scoop from pan + set aside

cook spinach and corn with salt and pepper in olive oil and sherry

when spinach is soft, add beans and chorizo

toss quickly to combine

top with breadcrumbs, drizzle olive oil

set under boiler to lightly brown

the tempeh-oatmeal meatloaf was tasteless and goopy. boooooo.
