Pinterest Luv: Apple Nachos
Now that I'm addicted to Pinterest, I decided to make a genuine effort to actually try some of the ideas that I have gathered up on my boards. I have been like a little squirrel packing things away for winter. It is very easy to repin! repin! repin! but not so easy to find the time to actually try a recipe, do a craft, or replicate a decorating idea. Those are the majority of my pins but I also have boards to collect ideas for tattoos, art history images, and things that just make me happy to look at--my Happy Happy Joy Joy! board. ;)
The first thing I am attempting is a quick snack recipe that I pinned onto my Food board. I re-pinned it from Lyndsay, a girl I was friends with in grade school (so funny that it connected me to follow her!) but it is originally from Manifest Vegan.
The idea is to replicate nachos with the following ingredients:
Apple Slices
Pecans
Almond Slivers
Coconut Flakes
Melted Peanut Butter
Chocolate Chips
...And whatever else you see fit.
I used melted sunflower seed butter for the first drizzle base because I'm into that butter big-time lately. (And the top was covered in peanut butter, like MV's recipe.)
It is definitely quick and easy and I suppose a better snack than typical junk food. I made this batch for a test-run and saved additional doses of the ingredients to make a batch to snack on at work. Dan and I tried it out after dinner and I have to say that it didn't quite work.
The author of Manifest Vegan made a point to use tart apples like honey crisp, and I failed to do that. My apples were a little bland and mealy. :( The grocery store didn't have Honey Crisp so I chose Gala. I don't know if Galas are not usually tart or I just picked over ripe ones? Honestly, I am new to the apple thing. I have never liked apples! So if I can't get Honey Crisps can anyone recommend a similar apple that would have a slightly tart flavor?

*Oh, it will still be eaten. It wasn't that bad. All the fixins over the apples are too good to pass up! It will be a great snack tomorrow at work.
